italian chicken soup.

hello hello hello.

what a gorgeous day today it was! we've been having a lot of rain lately.. so to have a day of sunshine sure changes things up :) this weekend was packed full of fun stuff!

sorry for the delay in the MENU monday. we were busy celebrating! we celebrated my mother-in-laws birthday on saturday/sunday and my dad's birthday and grandma's birthday yesterday!

so here is your MENU monday. on tuesday :)


 here is the recipe from easy pasta.

italian chicken soup
makes: 4 servings
time: 30 minutes

1 can of sweet corn drained
2 boneless chicken breasts cut up
5 cups of chicken broth
2/3 cup of heavy cream
egg noodles
salt, pepper and oregano to taste
1 tbs cornstarch
3 tbs milk

1. cook the chicken as desired. i like to season my chicken to add more flavor to the soup.
2. in a pot pour chicken broth and cream. bring to a boil and add in chicken. reduce heat and let simmer for 20 minutes.
3. in another pot put water and salt in and bring to a boil. add in the pasta and let it cook for 8-10 minutes or until desired. drain pasta well and keep warm.
4. season the soup to taste with salt, pepper and oregano. mix the cornstarch and milk together in a separate cup until smooth paste forms. then stir it into the soup.
5. add in the corn and pasta and heat through.
6. serve with a ladle into bowls and enjoy!
