creamy rotini and asparagus.



wow. what a fun weekend! we did a lot this weekend!! it was nice and long because i had friday off. we had some friends come up and visit; which was absolutely a blast! i'll show you our day adventures tomorrow :) for now.. here is a sneak peak of how much fun we have...

(i promise no trees were injured :))

now on to another week before lots of more fun this coming weekend! i would love to hear feedback - have any of your tried any of the recipes i've posted? have you and your families enjoyed them? i hope so!! :)

here is the recipe.

creamy rotini and asparagus

makes: 6 servings
time: 25 minutes

1 bunch of asparagus (you may cut them into 2" pieces if want to add into pasta)
1 box of rotini pasta
2 tbs butter
3 skinless boneless chicken breast cut into pieces
3/4 cup heavy cream
1/2 cup grated parmesan cheese
1/2 cup chicken broth*
salt and pepper to taste
1/4 cup toasted walnuts (we used shaved almonds instead), both are optional

1. bring a pot of water to boil. Add in asparagus and cook until desired (approx. 2 minutes if like them still a little crunchy). I like to steam my vegetables so we put ours in a steamer above the boiling water pot. :) but either way works! remove and set aside once done
2. bring another pot of water to a boil and add in pasta. you can use the same pot of water as the asparagus if desired! cook pasta to desirable texture. drain and keep warm, but don't rinse.
3. meanwhile in a large skillet, melt butter over medium heat and cook chicken until no longer pink. add in the heavy cream, parmesan cheese, chicken broth, salt and pepper (add in the asparagus if enjoying in the pasta). simmer until reduced slightly. approx. 7-8 minutes. 
4. add in pasta. toast walnuts (or almonds) in oven or toaster oven for a couple minutes. sprinkle on pasta.

there are some differences i did from this recipe. we like our cream sauce a little thicker so we opted out of using the chicken broth and used a little corn starch (approx. 1 tsp) instead to thicken it.


and there it is! mr. b LOVES when i make my pasta and white cream sauce so i knew this would be a hit! the only thing we didn't agree on was the almonds. mr b. didn't care for them but i really liked them on the pasta!
