tasty beef roast.



what a great weekend i had again! it was g-o-r-g-e-o-u-s weather! yesterday we went for a walk and went to the beach and walked on the pier. this again.. is SO unusual for us in mid-march!

we also grilled some delicious burgers on the grill last night. we stuffed the burgers with different peppers and onion. can you say delicious???

well.. speaking of delicious. this beef roast dinner was a hit!

mr. bv loved it so much he ate the rest of the roast by himself!! (this was a 3.42 LBS roast!!) i only had the portion in this photo... the rest was all him. not going to lie.. i was a little bummed i didn't get more :( guess i need to do a better job of hiding some left overs for myself!


here is this weeks recipe:



roast beef
3-4lb beef roast
1 can of cream of chicken (or mushroom) soup
1 pack of dry onion soup mix

1. put beef roast in crock pot.
2. pour can of soup and dry mix on top of beef.
3. turn crock pot on low and cook for 8 hours.
4. stir occasionally if desired
5. after 8 hours, poke with fork. if meat falls apart it's done! :)






i don't have pictures of making the gravy.. sorry!!
gravy
juices from crock pot
1/4 cup milk
1 heaping spoon of flour

1. take the juices and excess mixture from bottom of crock pot and pour into a sauce pan.
2. turn stove on high heat and let gravy boil.
3. in a side bowl mix milk and flour together.
4. slowly pour milk/flour mix into gravy while whisking. start with adding a little bit at a time.
5. add as little or much as desired for different flavor.


mr. bv loves mashed potatoes so it was a perfect pair with the roast. i also added in some steamed carrots!

ratings: we LOVED the whole dinner. the roast was 'falling off the fork' perfect!

this is my mom's recipe. i know there are other ones online.. but i didn't dare add anything more to it, and i'm glad i didn't!
this recipe is simple and tasty!
