stuffed spinach rigatoni and pesto pasta


wow - i apologize for the absence from last week completely! i think i caught a virus and it wiped me out from any evening activity possible (minus one night that we took a bike ride for some icecream). it's been so gorgeous here and i am loving it!

this past weekend was very eventful!! i will post more about it throughout the week :)

here is another MENU monday.

this weeks dinner is from last week - we enjoyed it before we went on our bike ride for icecream.


it was really good! the pasta i didn't make myself, it came stuffed.. but i would love to make it from scratch someday!

here is the recipe

stuffed spinach rigatoni and pesto pasta
time: 30 minutes
feeds: 4 servings

1 package of fresh rigatoni stuffed with spinach and ricotta cheese
3 skinless boneless chicken breast
4 tbs of pesto
1/2 cup half and half creamer
tomatoes and mozzarella cheese for garnish

1. season and prepare the chicken and grill it (we like to put fresh garlic on mine too)
2. put water on the stove and bring it to a boil. place pasta in pot and cook until desired.
3. place pesto in a sauce pan and heat up. mix in half and half creamer and continue to stir until mixed well.
4. take the chicken and cut it up into cubes. drain pasta and mix chicken in. 
5. place sauce over pasta. you don't need a lot of sauce.. it's pretty strong and a little goes a long way with flavor! - try it before applying a lot 
6. garnish with mozzarella cheese and tomatoes if desired.
