sweet potato fries

what a full weekend! this past weekend was super fun and eventful!!

first off, on thursday morning one of my roommates from college and great friends had her baby!! YAY!! i love that my friends are having babies, because we can't yet. we would like to be married for a few years before we start having kiddos - but i have to admit, seeing all these babies does give me some baby fever.. but i must hold off!

then friday-saturday i had my other 3 roommates from college come up to our home. i hosted them over and kicked my husband out for the night. we had so much fun making dinner and making new memories! here was a fun picture we took when we realized we were a totem pole! my sister-in-law standing next to me is the same height (she had her heels on already, that's why it was so silly!). aren't they gorgeous??!!!!

saturday afternoon my lovely friends left and then my husband and i had more friends come over! the boys did their thing and me and future mrs. b baked some cookies and talked the afternoon and evening away.
and on the Lord's day we rested. i seriously think i did 4 loads of dishes on saturday. now my sink is full.. and i'm on strike! ha

anyways, so here is your MENU monday.!

this week's recipe is for sweet potato fries. i absolutely LOVE sweet potatoes, and mr. bv doesn't really like them.. but these fries he actually really liked! yay!! i think i'm slowly converting his taste buds.. or like to think i am ;)

here is the recipe:


sweet potato fries
3 sweet potatoes
olive oil
1 tbs butter
3 tbs brown sugar

1. preheat the oven to 350 degrees F. peel the potatoes and cut them into long skinny strips - like fries.
2. spray a cookie sheet or baking stone. cover potato fries in oil, not dowsing them.. just enough so they can get crispy.
3. spread the potatoes over the whole sheet. cut up the butter into small chunks and place randomly over potatoes.
4. sprinkle brown sugar over the potatoes. place them in the oven and cook them for 10 minutes or until cooked as desired.
5. eat and enjoy!!

so, this recipe i made up myself.. and they don't turn out crispy like fries.. they turn out a little softer, but were still delicious! :)

mr. bv really liked them and they were even delicious heated up a couple days later as a snack!

i don't have a photo of how they turned out.. but here's one i found that they looked like!
